Your friends are different than mine because we felt the Korean style was head and shoulders better than the southern style. It could be a dark meat vs. white meat thing but the southern style needed all the help the sauces could provide.

This is nonsense. I'm in Memphis pretty often for the past year and the top places in NYC would do fine there, aside from the prices.

You can take the Hog Pit right off the list the food is completely unremarkable at least it was at the old location and I haven't heard any different about the new location.
I've never eaten at Blue Smoke. The idea of an haute BBQ place always struck me as odd. The juicy brisket and Kreuz sausage at Hill Country is good. It might be interesting for you to taste how German sausage translates when it prepared in Texas (where Hill Country gets their sausage) and smoked.
I like the Redhead but unless you get there early expect a long and crowded wait.

Why is food always so hot?
Better hot then cold or even warm. I like my food hot. You can send it back but it'll just sit in the kitchen for a few minutes and then they'll bring it back out to you when it's cooled a bit or you can just let it cool at the table.

The weight isn't an issue for me. It doesn't take long to puree anything with the Bamix so you're not holding it for very long/

Pickles, why refrigerate them?
I don't know about all pickles but some that aren't very salty or sour can develope "scum" on the top of the brine if not refrigerated.

Pegu and Little Branch are both pretty close by. I'm not sure either can be considered very romantic but both are best in class.

Cafe Zaiya is all pre-made food with limited seating. There aren't "food stalls". Think pre-made sanwiches, bentos, sushi, etc on shelves. You can heat them in the microwave. The workers are mixed, some "real" Japanese and people of other races. But this really doesn't matter because you really don't know who made your food anyway.
What tool do you use for zesting and for twists?
A channel knife is less then $20 and makes perfect twists.

Vintage Heublein Manhattan Cocktail
This sounds like a very, very sweet cocktail even a 1:1 bourbon to sweet vermouth will make an extremely wet Manhattan. Add in some more maple syrup and you have a sugar bomb. I'm curious what the additional time will have on the final product. I hope you follow up with the results.

Corner Bistro serves a good not great burger. It's a neighborhood bar, not much atmosphere but not a bad place for a burger and a drink.

I'll have to disagree with you on this point. The trials are over and there is a new formula. The cooking shows are all about, "quick and simple". Minimal technique and safe, common ingredients. The prime time shows are either cheap to produce competition shows or shows based on "personailities".
The rating are better then ever and things won't change unless the ratings start going down.

The drink made with vodka and vermouth is called a Kangaroo. It's not a name that is used much any more but it is the proper name.
How to pick limes?
Just pick up 2 limes of comparable size in each hand, the heavier of the two is a juicier lime. It's pretty easy to differentiate between a juicy lime and a desiccated one.

Boiling has 1 advantage over steaming (or microwaving as my preferred "steaming" method) and that is if you boil in very well salted water you can add a lot of salinity into that spud.
