Now that my pans are clean, I'm ready to have another go! Thank you so much for the recipe, Buttertart, and the photos - they look delish!
I just got my Grandmother's Madeleine's tins from her kitchen this weekend and couldn't wait to give them a whirl - so, yes, - mine are ancient, too. She had 3; one from England and 2 from France per the stamping on the back. It makes me feel like I have her with me when I use any of her cooking instruments.

Hi all! Just made my first - and successful - batch of Madeleines and I am in love. They came out perfect. For the most part I followed Julia Child's recipe almost verbatim, but added baking power per Lebovitz and did the lemon glaze. I cooked for 15 minutes but now I can't remember if I baked at 375 deg. or 425 deg. in large Madeleine pans.
Can't wait to try everyone else's tips, tricks, and recipes!

Along these same lines - kinda, well sorta - I happened upon this thread because I am out of aluminum foil to line the bottom of a cookie sheet for catching grease/drippings, and was wondering if it might be safe to line a pan with a brown paper bag for that purpose. I have the oven at 350 deg. Anyone know if this is a safe method? Don't want to catch my house in fire just because I don't want to go to the market at 9pm to get foil. Thank you!

On a related note, do my Chowhound friends know how long I should let the pastry dough haw before putting into the springform pan (thaw in refrigerator or on counter?) for the quiche? I have a lot of cooking to do for this weekend for a baby shower, and was trying to get part of it knocked out early in the week. As my great-grandmother said, "the hurrier I go, the behinder I get."
I don't guess I should try to work the little bit of salt into the pastry dough before I put it into the springform pan, right? Just sprinkle a tiny bit & press in like ChefJ said?

I'm making the "buttery pastry shell" for Thomas Keller's mushroom quiche and I realized I forgot to add the salt to the dough - which is now resting comfortably in the freezer.

Good morning everyone! So, I just searched the boards first on "Parizade" and there are no recent posts at all (except mentioning it as a geographical point of reference and another giving it as an alternative to a steakhouse), so I thought I would pay tribute to dinner last night at one of my favorite restaurants throughout lo these many years.
There was a group of 6 of us celebrating my birthday dinner, and, from the start, we had impeccable and friendly professional service by Thomas, who was a real classy charmer. Last night (Thursday) was martini night special so we had a variety of special mixed cocktails from the French to the Pomtini to a classic to Fliritini and they were all spot-on. We didn't have appetizers, saving room for dessert.
For the entrees we had paella, soft-shell crab, baked eggplant, lamp chops, whole roasted sea bass, and braised short ribs. I ordered the paella which was absolutely luscious. I also tried the sea bass, lamb chops, and soft shelled crab - and that s.s.crab, especially, was a knock-out. I've never had better. I can't wait to dig into my paella leftovers today. Thomas filleted the whole sea bass table-side and did a beautiful and deft job with that. (I was on the verge of asking for the head and bones to take home to make fish stock, but decided not to be tacky).
For dessert, Thomas brought out a heaping platter that our host had pre-ordered with 5 different desserts on it, arranged around a humorous grinning miniature chef, who was trying to reach for "floating" chocolate butterflies standing on spears. It was ahhhhh-dorable. Oh, and part of the deserts were french macarons (that we have been discussing on another thread lately).
Another waitress that recognized me came to check on us (and it had been probably a year since I had been in), and the manager came over twice throughout the evening to see how everything was. Parizade has always had terrific service, and terrific food, and I need to go back much sooner than I had the last time. All 6 of us were terrifically pleased with our meals and the dining experience.

My Mom & her husband eat there on a somewhat frequent basis, but I have yet to go. They really enjoy it.

Two updates:
(1) Caruso's: http://www.carusosfinedining.com/ My first time there. We had the special Chilean sea bass and the Vitello Trifilato. Good Golly Miss Molly! Impeccable and flavorful - well-seasoned and perfectly cooked. You could taste the attention to detail and I was really happy that is where we decided to go. I liked the ambiance, and couldn't believe such a well-decoated, warm restaurant was inside the shopping center. The veal leftovers were even more amazing the next day, if that was possible.
(2) Prickly Pear: http://www.pricklypear.net/ Also our first time. NOT HAPPY. We had reservations at 8pm (still had to wait about 15 minutes to be seated) and didn't get food until 9:30pm. They had run out of margaritas by the time I ordered the second one. HELLO. It is a Tex-Mex place and they ran out of margaritas? I do not understand that. The server, while nice, was running around like a mad woman. No hostess, manager, chef, etc. came out to check on us and apologize or offer a lagniappe for the never-ending wait.
Chips & salsa are on the appetizer menu; not brought out as compliments to the table. Fairly ridiculous in my opinion given the price-point of the menu.
Because it was 9:30 by the time the food came, I was not hungry at all. (We both got fajitas: shrimp and chicken). I asked it to be prepared for take-home. Instead she brought me a styrofoam box. She didn't bring one for him who clearly had a ton of food on his plate. She did not bring containers for the fajitas condiments (beans, sour cream, pico, cheese) so I had to ask for containers for those. Not to mention I had to ask for a container for his, and the fajita sides for his left-overs. She had only brought out tiny portions of the condiments/sides to begin with which would not have been enough for us both to have had with the fajitas for the meal.
Though the fajitas were tasty, I would have to be very hard-pressed to ever go back to the Prickly Pear.

I stopped by Hereghty's this afternoon to get a thank-you present for someone and saw they had macarons française with the other pastries. I didn't have time to do much more than salivate and make mental note to be sure to post to CH. http://www.hereghty.com/index.php

Anyone Made Thomas Keller's Quiche Lorraine?
Hi all! Do tell -- what do you do with the Keller-crust that is draped over the top of the springform pan?Leave it? Break it off? Just trying to think presentation wise. The photo I found via google images was tons of crust falling like curtains over the outside sides of the springform pan.
Weird/Bad Food Related Dates
Good Lord! This post made me laugh because it brought back something I hadn't remembered in a hundred years. It was when I was in high school and had a date with a college boy. I had a first date that occurred at the d@mn Taco Bell, too! However, it was in the DRIVE -THROUGH. Not only that - we pulled into a parking place AT the Taco Bell to eat after getting the greasy bag. He said it was a picnic in the parking lot. Good Lord.

Huntersville, NC / nice dining with kids? Is this possible?
Hey all! I was thinking of organizing a Saturday lunch or brunch for 7-ish of my Charlotte-area friends (most of whom are moms with 2 kids) at a place near Huntersville where we could either eat first (probably including their children) and then go to the Raptor Center in Huntersville or possibly vice versa.
I don't have children so I haven't ever tried to look for a restaurant that accommodates kids, but as a diner, I would appreciate it if the children were in a separate area of the restaurant or at least at a time where it wasn't crowded and there aren't unruly/messy/loud children at the table next to me. In my experience, when several kids get together, it is general mayhem so I don't want to disturb there diners that are there sans-kids.
For me, I'd prefer no chains, but I wonder what options are available to accommodate these parameters. I'm thinking that I'd like to do brunch/early lunch first and then go to the Raptor Center so we don't have to be in a rush to get back in time for reservations at some point-certain.

Assaggio's. 3501 W Millbrook Rd, Raleigh NC 27613 I used to go there every so often when I had a friend that lived nearby and it was always very good. It is like behind the FedEx at the corner of Millbrook & Glenwood.
Anyone else been? I enjoyed it, but it isn't close and I haven't been since my friend moved.

Now, here in the Triangle, I have been passively searching for francaise macarons and have only found reasonably authentic ones at A Southern Season, which I thought were pretty tasty.

Pound Cakes
Ummm..... I am a pound cake aficionado and I swear I thought none were better than the few recipes I had in my repertoire. But. I stand vastly mistaken. Chowser, this was ahhh-mazing. I drizzled it with Disaronno and that made it even more luscious (tasted it before and after). Thank you.
