As I've said before, I've never had a problem making the dulce de leche this way. I survived; I'm sure you will too.

I know this is a common concern, but it's never happened to me (and I use this method frequently) nor have I actually heard of this actually happening to anyone. However, I guess anything is possible, right? The can is totally immersed in water so I don't puncture it. It's a slow cook, so I doubt it's actually boiling in the can. In Daisy Martinez's cookbook "Daisy Cooks" she just slowly goods the condensed milk in the double boiler. So if exploding cans is a concern, I'd do it that way.

I make my own dulce de leche. Just put a can of sweetened condensed milk (with the label removed) in a big pot of water, bring to a boil and then just let it simmer for a few hours. I've done this countless times and it's just as delicious as the $8 jar I've purchased as Sur La Table.

Need Recipe for a good Buttercream Vanilla /Cream Cheese/Chocolate FROSTING for cupcakes

I always love this cream cheese frosting recipe:

1 (8-ounce) package cream cheese
1 stick unsalted butter, softened
1 cup melted marshmallows (I use a whole jar of marshmallow fluff)
1 (1-pound) box confectioners' sugar (you can definitely reduce this)
1 tsp vanilla

Might be tasty on a chocolate cupcake.

Fish Tacos in San Fran

I don't like fish, but I've always heard raves about Nick's Crispy Tacos on Polk Street. I'm not sure how "legit" it is, but some friends have compared them to the ones they get in Baja. I've had their chicken ones and enjoyed it.

Bariani California Olive Oil

I've just been nominated to find a venue for my firm's holiday party. Any hidden treasures? We're looking to host a dinner-dance for 150 people in either San Francisco or Berkeley/Oakland. Great food and beautiful views a plus. We were spoiled last year when we had a luncheon at the Casa Madrona in Sausalito on a beautiful, warm December day.

I'm a fan of the Teacake Bake Shop in Emeryville's Bay Street shopping center. The best I've tasted in the Bay Area so far. The cake has always been moist and the frosting just the right amount of sweet.
