Roast vegetables - parsnips, carrots, asparagus, broccoli, onions, mushrooms (what else is in the fridge?) - chop it into large chunks, toss in Extra Virgin and minced garlic, put on a big roasting tray (or pan) and cook about 40 -45 min at 400 degrees. Goes with everything from filet to burgers.
