Pumpkin and crabapples keep and therefore are in season although not the season when they are first picked. Cherries, especially sour cherries are preserved in some way since the season is only a couple of weeks. Any other time you get a cherry pie, it is probably from some sort of preserved cherries, frozen, canned, reconstituted dried or something.

They offer pairings which can be interesting (at least to me). The pairings are not listed on the menu. The sommelier comes around and almost offhandedly offers them.

When it is aged "vielle" it is very hard. Very cheddar like when young. and somewhat softer.

So what are they supposed to call it? You have to use a name that people understand or don't have to be specifically educated to understand. Scream's "Pacojetted" nut purees really doesn't do it.

That is the brand that the Pasta Shop sells. Fatted Calf makes a respectable Spanish style chorizo. It is like Palacios in some ways. I have never been to Spain so have no direct knowledge.

Not in Oakland/Berkeley but a lot further north Downtown Bakery and Creamery in Healdsburg always has galettes.
