High Tea Menu Help Please
High tea is beans on toast. Afternoon tea is the fancy one. It sounds like you are hosting afternoon tea. Americans never seem to get this right.
Does it need to be vegetarian? Becase smoked salmon or shrimp marie rose are also traditional as a thin roast beef. Chicken salad of some type is too. (Wouldn't work at our school though)
I include a healthier type mini muffin, even if it isn't traditional. One of the weelicious ones (berry, chocolate chip banana if allowed) are quite good.
Maybe a fruit tart of some sort
The mini quich is a good idea too.
Remember, the goal is snack + fancy.
Cherry pie
Are you using recipes for sour cherries or montmorency or "pie" cherries? Very few people seem to have access them so sweet cherries are often substituted.
And yes, I am jealous too. I adore sour cherry pie.
radioactive matter in bluefin
In that bluefin shouldn't be consumed at all because it is a species under serious, known threat I can't feel very sorry for the people sharpening their knives.
Which cuisine is the most frugal in which to cook/eat by?
I think you have to consider location of the cook. Mexicans living in the US have a much, much less healthful diet because the cost of fruits and vegetables is much higher here. Mexicans living in Mexico have access to abundant, good quality produce and fruit that they eat in abundance.
Tuna Fish in a Can
Fascinating. I didn't know that.
It is 1,000 better than their regular tuna.
Shrimps not "smooth" after boiling (or poaching) for shrimp cocktail
In my experience, shrimp purchased frozen are almost of better quality than those defrosted at the counter. Have you tried those?
Crumbling shrimp make me think "overcooked." I always do a single test shrimp before cooking a large number but I usually only cook them about two minutes.
Breakfast Biscuit Sandwich?
The Clementine biscuit breakfast is a sandwich with a large biscuit inclosing the poached egg and shave Benton's country ham with cheddar I think. Quite large.
They also do an appetizer-type small biscuit with shaved hame and apple butter, no egg.
Why do you continue shopping at CostCo? I am underwhelmed. What do you appreciate about the warehouse store?
I live in LA but I was at a Costco in Orange County, Brea or Fullerton maybe. I looked everywhere, ever cold case.
Meat upgrades at Farmer's Market (Third and Fairfax)
Marconda's is now selling various cuts of Niman Ranch pork and Huntington recently introduced beef that is 100% grass fed. I noticed that the ground beef was $7/pound which is pretty reasonable. Haven't tried either yet but it deserved a mention.
(Second) Kiriko's $40 Lunch Sushi Omakase, w/Photos
Thanks for the update. Yes, I should have mentioned the salmon skin roll as a good alternative too.
Make ahead meals for Elderly
Don't forget soup of any type. My grandmother preferred soup for lunch and most commercial versions are lousy.
Langer's vs. Katz's and One Other LA vs NY Observation
Several years ago Mr. JudiAU went to New York for no good reason and left me slaving at home. But...he brought a large hunk of pastrami back from Katz' and stopped to pick up bread from Langers. Beautiful...
Uses for Whey - the Real Deal, Not Powder
Whey has been used as animal feed for a long time, usually for pigs, but I can't recommend it. We bought a seriously nasty fish-flavored pig last year that was fed whey from a famous dairy. It often gives an off flavor.
So no need to find room for a pig or other animal on your patio.
ISO brand of good, whole wheat pasta
They have gotten better.
The two readily available versions we like are the De Cecco spirals (not the other shapes, which are worse) and the Whole Foods 360 private label small elbows. The elbows are the best and sneak into a lot of the foods for the kids.
Some health-orientated schools have had good luck witht he Barilla Plus line which includes more fiber and protein. It is also a lower in carbs. But I haven't heard it because I am more interested in whole wheat for the kiddos.
Degradation of Worcestershire Sauce
There have been reports of many companies who cheapened their products with HFCS switching to other sweeteners after the HFCS backlash. My guess is this is why. However, I don't remember sugar being an ingredient in the past.
Foods you dread making because they’re time-consuming
Top three that I am obligated for various reasons to make every year.
Pierogis
Kifli cookies with homemade fillings
rabbit sausage
All three are PITA and so tasty they must be made.
Foods you dread making because they’re time-consuming
Yep, pierogie. What a pain. My family loves them as part of a family dinner and we aren't even polish. Our nanny was when I was a kid and it is her recipe.
I Had a Great Crabcake today at Veggie Grill
Good point. Although, everyone at our local store is always super buff and sort of glowing that it makes me wonder if it is mostly non-veg people who think vegan means healthy. But the two friends I have are the first to admit they don't think it is healthy, just positive.
Best gourmet ice cream and patisserie?
We went there once right after it opened. It was kind of a weird experience. I had my two kids with me and more than half the flavors where cheese-based or spicy. And the one person working really, really seemed to dislike kids. (The place was empty.) The ice cream was fine but I remember it being very rich. I suppose I should try it again, although I more closely associate Berthillon with intense fruit flavors, both ice cream and sorbet.
Best place to say bye to Fois Gras
We had some pretty exceptional preparations at Animal on Friday. It was almost odd, because the fois was treated in such new ways than the seared with sweet sauce version that is so often served. Our favorite was the tongue with pastrami seasoning and foie gras.
I Had a Great Crabcake today at Veggie Grill
Yeah. But it doesn't include the calorie-laden sauces or the frying etc. or the fact that everything seems to have sugar in it. I just got a response from my email request (2nd time- requested last year too) saying that they didn't have because it wasn't required... yet.
VG lovers are going to have a seriously nasty shock when they do include nutritional data.
Calorie listings at chains
I don't eat in chains very often but I very much appreciate the listings when I do. I have no doubt the restaurant food that I prefer to eat is equally unhealthy but at least it makes me guilty enough to really THINK about what I order.
Favorite Paper Towel?
I avoid using paper towels in lieu of small washcloths, rags, and dishtowels.
So when I do use paper towels I like the experience to be as punitive as possible. I like the "brown guilt" seventh generation version.
I Had a Great Crabcake today at Veggie Grill
My kids really like Veggie Grill so we go there on occasion. I'd be happier about it if they posted nutrtion data on their website or would give it to me when I request it.
Roscoe's Chicken and Waffles Questions
I like the Carol C special. Skip everything else include the margarine.
Chicken + waffle + hot sauce.
Best gourmet ice cream and patisserie?
bulavinaka- I saw your post about my comments on the other board and traced it back to here.
Yes, I remember Russ Parson's article about Harry's. We just disagree, he and I. I do value certified organic value and I particularly distrust the "halo" effect whereby other growers claim similiar techniques but don't "bother" with certification practice. Frankly, I'd rather buy "no spray" which is just as meaningless.
I've been working in the real and organic foods movement for a long time and frankly, the paperwork and cost associated with it are pretty minor for a farm with a small number of crops. I think they don't become certified organic because they choose not to follow the letter of the law or because they are thumbing their nose at the system, enjoying the halo effect, and still charging a dollar more per basket for their berries than farmer's who do comply with the law. I don't really care why. That's fine. Lots of people will choose to buy their berries, which are tasty.
But for me, my dollars support my values. When I buy a premium-priced product I want a premium product in *all* the ways I value.
Best gourmet ice cream and patisserie?
Amandine is nice enough but I wouldn't drive across the city to go there. I've gone there several times to see why it is much-loved on these boards but never been rewarded without anything spectacular. And I particularly don't like their monstrous croissants.
LA is bakery-poor and I think most majors cities have more and better bakeries of note.
Raw Milk direct from the farmer?
http://claravaledairy.com/store_list.html
I haven't heard of a legal source for raw goat's milk in CA.
Why do you continue shopping at CostCo? I am underwhelmed. What do you appreciate about the warehouse store?
If you buy conventional meat and farmed seafood than the price to quality ratio is very good. But I don't so it doesn't do me any good.
I was just there two weeks ago with my mom, a member, and I found it utterly depressing. I thought I could stock up on a party we were having.
They didn't even have a crummy version of organic milk! Nothing organic. Nothing natural. Everything was the super-processed HFSC versions that I won't buy. Even things like paper goods weren't something that I would purchase because they had nothing recycled and/or compostable.
Edited to add- they did actually have some organic eggs, which $1 more a dozen than Whole Foods
