Blanching then freezing vegetables?

Hey fellow chowhounds,

I have been getting into some great make-ahead techniques b/c of a new work schedule that requires me being at work during lunch and dinner hours.

I seem to remember reading in America's Test Kitchen somewhere that lots of vegetables can be blanched and then shocked and frozen to be reheated at a later point to good success. Anyone ever heard of done this before??? Thanks:)

I have a most delicious problem...I bought a tender, fresh piece of flank steak that I've decided to make into some kind of steak and eggs for a hearty breakfast. How would you prepare such a breakfast? I'm leaning towards some kind of Mexican variation, but I'm welcome to any ideas creatively modern or simply traditional. Thanks Chowhounders! : )

It's too hot to bake a cake for my love, can I make a homemade ice cream cake?

I've determined that baking a cake when my apartment is already 90 degrees is out of the question. But my girlfriend's birthday is this weekend and I'm determined to make something special. Does anyone have any ice cream cake recipes?? Other homemade ice cream treats are also welcome, I've been waiting months for an excuse to use my ice cream maker again! Thanks chowhounds!

Tacos for dinner tonight...3-pronged question

So I'm making some gr. beef tacos for dinner tonight, and I'm sick of buying the taco seasoning packets when I have a huge spice rack at home. So the question is: What's your favorite homemade taco seasoning?

Prong 2: Is there a way to achieve a crispy corn tortilla shell in the shape of a taco without frying. I have baked tortillas before, but always for tostatadas; Is there a way to achieve the taco shell without the grease???

Prong 3: What's the best version of michelada? I've made a few, but am dubious to the addition of Worcestire (it also doesn't theme as authentic) Anyone have one they love on nice summer days?

Any input is welcome, I'd love to hear some opinions on any of these topics. Happy chowing! ; o

Wonderful recommendation perk! I love Bobby Flay's potato salad from Boy Meets Grill that has a great mayo-chipotle base.

Sausage on the grill

I learned a great technique for poaching sausages before browning them in a skillet or a grill. If you poach them at a barely simmering water for about 8 minutes (I think it's around 140-160 degrees), they get cooked but are wonderfully moist, flavorful and juicy. You can the brown the outsides on the grill for more flavor and caramelization, or if you're inside...slice them into rounds and saute with some extra virgin oil and balsamic for a couple minutes. It's a great appetizer.

Torta's has great tacos if you ask for their homemade tortillas. Their albondigas is rustic and delicous as well. On Ventura near Vineland.

Moving to North Hollywood - need restaurant tips!

Kung Pao Bistro is good, but I'd say a was better value is Chinese Deli T & D at the corner of Camarillo and Lankershim and Vineland. It's mostly a Takeout and delivery place as the name implies, but everything there is quite good and you get a great amount of fresh food for the money. Some of my favorites are the orange flavor combination, BBQ pork fried rice, and their cheese fried wontons.

I agree about the Pain Quotidian. I really love how they let you half the loafs too. I also have to second Porto's, my girlfriend loves that place.

BTW, has anyone been to Big Sugar Bakery on Ventura in Studio City. I think that's the name, I've heard good things but haven't been.

One meal Wed Nobu, Providence, or Sasabune

I gotta agree with the other posters here, Sasabune is surely not the best meal to be had in LA.

le pain quotidien is down the street a bit on ventura, they probably have takeout available, and their sandwiches come on their heavenly bread.

Moving to Studio City

Great posts from everybody. A couple places I was floored that nobody suggested and that you have, have, HAVE to try!

2. Minibar - really great, inspired Latin-influenced tapas with really nice decor and service. I always have a great experience there. The empanadas are very good.

3. Good Neighbor - the nicest couple in the world owns this place, and the food matches the great service. You never have to wait over ten minutes here, and even that is rare.

5. Tortas - can't believe no one mentioned this and so many said there isn't any good Mexican around this area. Try their asada or carnitas taco with their homemade tortilla, you won't be sorry.

6. Chinese Deli T & D. Really great Chinese for the price, and FAST delivery.

best bread for sandwiches

The best I've found so far is Le Pain Quotidien. By far the best bread I've found, especially for whole wheat or other healthy loaves like their spelt bread. They use a natural leavener that makes the bread have an amazing, earthy sweetness. And even Jeffrey Steingarten says they have some amazing croissants. There's one in Sherman Oaks on Ventura.

I liked Firefly's cheese plate b/c their specific accompaniments for each cheese were so appropriate and spot-on.

Best Cheesesteak near sherman oaks

I know a great place that's near Sherman Oaks, I actually think their meat has a much better taste than Philly's best, it tastes very quality to me. Great rolls, too, and it's a little ma and pa, family-run place that always has the owners working the register, who are really friendly and welcoming. I would try it if that's still in your neck of the woods.

Sebastian's Toluca Lake - Redo by Ramsay?

I've actually only been there after the show was taped, but the pizza is really good. That's all I've had, but it is really good crust, definitely the best in the area I'd say. From what I've heard from people who went there pre-taping, the menu is much less confusing now. The service has always been quite friendly when I've been there, if a little slow but not anything to complain about. Just a relaxed environment.
