After 10, Charlotte has pretty much gone to bed and you are left with Sir Edmund Halley's or The Penguin. I'm serious. If someone knows a place with real food after 10 please let me know because, upon reflection, this is freaking ridiculous.

Tuesdays are half bottles of wine at Andrew Blairs. Pietown is good for something a little more casual. Customshop for something a little more refined.

Ya know, I wouldn't recommend cooking a burger to sub-medium with ground beef that I picked up from the cold case at the grocer. At the very least pick a good fresh cut and have them grind it for you while you're there.

Actually there was a recent article in a local paper that included the head of the health dept saying that whether the beef was ground onsite or not was 'immaterial' and that you couldn't serve ground beef in NC that hadn't been heated to 165 F all the way through [and ruined].

Not that it stopped us at my last gig.

Yeah, leave the flash the hell off and if you don't know how to do that please turn in your photographers badge.

Some dude reviewed where I was working and took pictures of everything including yours truly, and when I saw that on the net it was pretty creepy. Very blurry picture but still creepy that he was just shooting me and I didn't see him and then hey, there I am. Ask the staff permission.

Pictures of the food should probably also be kept to yourself and not posted since it takes a good eye for lighting to make most anything look photogenic and it does a disservice to the place to portray the food in a bad light (ha).

I haven't been to Red Sea in a long time but their vegetarian lunch special is really interesting - four or five warm salads/purees over spongebread that you eat with your hands. Fun stuff. Weird atmosphere.

It's not a matter of a supply where the number of competent chefs is limited so much as what the market down here will bear. Right now the market down here in general is not very sophisticated and the money has the habit of leaving town during the summer meaning that a successful place has to both cater to the lowest common denominator and have enough back to ride out the business cycle in fine dining here. If I did happen to graduate from the Charlotte JW I would relocate for work.

Don't listen to the Fuel hate - if you order your pizza from the place across the street it should still be poppin' fresh when it arrives. You don't really have any other options. It might not be pure NY but it's always been decent for me when I've had it delivered. The by-the-slice stuff that they reheat not so much.

Heh, and who is going to finance these genius chefs when they freak out the charlotte market with wacky things like sweetbreads and bone marrow and seafood cooked less than to death and back?

The money follows the chicken down here - the cheapest dirtiest fowl available. And that's great -- price's is great -- but the fact that it's our local food landmark (maybe next to the penguin?) really shows how far this place has to go.

JW might improve things but my (and others') experiences with their local students has led me to consider their degree to be pretty worthless as a metric of competence. CPCC and it's recent expansion on the other hand, could be of actual significance given its accessibility to those who are neither independently wealthy nor stupid enough to take out a ginormous student loan that nets ~10/hr in the real marketplace.
