New Finds: Mead That's a Cut Above the Renaissance Faire
Mead is experiencing a boomlet among the artisanal brewing community. This naturally sparkling treat from Heidrun, a Meadery in Arcata, California, is made using carrot blossom honey from Madras, Oregon. It’s wonderfully effervescent and crisp, with none of the clumsy sweetness I expected from mead, and a wonderfully woodsy almost chestnut-honey-esque funk on the finish.

"MEthode Champonoise" means this mead was actually riddled and bottle conditioned. It's good, but hard to find! A lot of work and love went into it. I like Sparkling Meads, but, to be onest, I prefer the still ones.
Mead is so easy to make, it's silly more people don't do it. then again, it takes about a year- maybe more to ferment and be drinkable.
It has been awhile since I've had mead, and never procured a bottle for my honeymoon...it may be time to revisit this drink from which my best memories included a bottle on the rocks in some port town, watching the sun set.
