My Bottled BFF
Generally, my refrigerator breaks down into 5 percent leftovers, 10 percent dairy, 15 percent fruits and vegetables, and 70 percent condiments. Like faithful friends, condiments are always there for me but sometimes taken for granted. One of my favorites among favorites is the astringent yet sweet Cortas Pomegranate Molasses. Perhaps not a true condiment (it’s basically a pomegranate juice reduced to a thick syrup), it can be slipped into many recipes, including salad dressings, meats, stews, soups, and grains. It’s a staple in Arab, Indian, and Mediterranean cuisines, as well as in my kitchen.
