Tobiko is the roe of Japanese flying fish (Exocoetus volitans), used to create certain types of sushi. The very small, loose, salted eggs are usually orange or pale yellow with light briny flavor and a crunchy, popping texture. It is now available in a range of colors, from green to gold to red to black, and flavors, including wasabi and jalapeño.
