Mojama

Mochama (Portuguese); musciame (Italian). This Spanish salt-cured, air-dried tuna loin is comparable to prosciutto (air-dried pork leg). Mojama is most commonly found in southern Spain. Mojama is most often served in thin, translucent slices, drenched in fine extra-virgin olive oil. In Italy a similar salt-cured air-dried tuna loin, called musciame, is a Sardinian specialty. Originally it was made with dolphin loin, now illegal.
