Lutefisk
Lutefisk is a highly pungent traditional food of Scandinavia made from air-dried stockfish and caustic lye. In Scandinavia and American Scandinavian communities, lutefisk is typically served for the Christmas season. Lutefisk prepared from cod is notorious for its intense odor; if made from pollock or haddock, it has little odor. To cook it, lutefisk is steamed at low heat for about 20 minutes until soft. It is mild and mellow in flavor and is often served in a spiced white sauce. Many Scandinavians claim their strength and longevity are derived from eating lutefisk at least once a year, and it is a point of pride to do so.
