Pastrami is a Romanian specialty adapted from Turkish basturma—spiced, pressed, and dried meat—brought to the United States by Jewish immigrants in the late nineteenth century. Originally made with goose, pastrami is now commonly made with a fatty cut of beef brisket or plate. The meat is dry-cured with kosher salt, garlic, peppercorns, cinnamon, red pepper, cloves, allspice, and coriander, smoked, and steamed.
