Deep rose or pink, moist, and sweet, this type is America’s most popular ham. Made by soaking the ham in brine and then boiling or lightly smoking, these hams may be injected—an industrial process used to speed up curing time—and then tumbled, or massaged, to produce a more tender product. City hams are less expensive and milder in flavor than country hams because the processing is shorter and simpler.
