Ham is a meaty, plump hog’s upper hind leg that is commonly cured and smoked; it may be cooked or raw. Fully cooked brine-cured hams are the most common, and, if smoked, they are only lightly smoked. The smoking process not only adds flavor but also aids in aging. The longer the aging, the more flavorful the ham. Some hams are aged up to 2 years. Partially cooked hams must be cooked to be safe for eating. Fully cooked and canned hams can be eaten straight from the package.
