Weisswurst (weißwürste, white sausage)

German for “white sausage,” weisswurst is a delicate, mildly seasoned sausage related to boudin blanc made with veal, cream, and eggs. A specialty of Munich, the links are about 4 inches long, plump, and light in color. Germans like to eat them with special sweet mustard, rye bread, beer, and potato salad during Oktoberfest.
