Salami (plural for salame)
This family of Italian ready-to-eat sausages is made with beef and/or pork heavily seasoned with garlic and spices. Some producers use wine for moisture and to develop a special character during the cure, while others use nothing but pork, fatback, and white peppercorns. They’re often thinly sliced and used in sandwiches or antipasto plates. Many types of salami, like the popular Genoa salami, are air-dried and somewhat hard. Others, like salami cotto and kosher salami, are cooked, which makes them softer and more perishable. In Italian, salame is the singular form and salami the plural, but Americans often talk of one salami and many salamis.
