Landjager (landjaeger, landjaeger cervelat)

The name for this German sausage means “hunter,” perhaps because it needs no refrigeration and is handy to take on hunts. A semi-dry sausage of Swiss origin, it is made from beef and pork, heavily smoked, and has a black, wrinkled appearance.
