Andouille sausage, cajun
This spicy, smoked Cajun sausage is coarse-textured and seasoned with cayenne pepper, mustard, paprika, and garlic. It is made from lean chopped pork smoked with hickory wood. It is added to gumbo and jambalaya and also served cold as an hors d’oeuvre.
