Packed with Protein ... and Exoskeleton

They’re nutritious, plentiful, cheap, and—crunchy. And now scientists from the United Nations want to promote them as a solution to world hunger.

They’re bugs! And a recent UN conference in Thailand explored their use as a food source.

Of course, eating bugs is nothing new, but the UN Food and Agriculture Organization, perhaps noticing anew that grain prices are going through the roof and global warming could seriously mess with our food supplies, wants to assist in creating an infrastructure to raise, transport, and market bugs as food to help support human nutrition in case of possible famine.

I can’t wait until the United States has an official insect marketing board. “Bugs: They’re What’s for Dinner.” “Insects: The Other Crunchy Meat.” I could do this all day.

Just think how much money and pesticides they could save if instead of trying to get rid of bugs in foods they could sell them as "protein enriched"!
