Can Good Syrup Go Bad?
Does maple syrup ever spoil? ”’Ever’ is a long time,” says todao, “but I’ve never heard of maple syrup ‘spoiling,’ unless it has developed a mold of some type.” Purity, method of storage, temperature, and humidity may all contribute to the longevity of maple syrup.
Depending on your disposition, even a layer of mold might not be the end of the world. Zeldog recommends you just scrape it off; the syrup will still taste fine. vtblues, a self-described “Vermonter in the know,” agrees, saying that maple syrup doesn’t really go bad. Remove the mold, boil it in a pan on the stove, and store in a non-reactive container, like glass. Refrigerate or freeze maple syrup once opened. “Use common sense,” says vtblues. “If it tastes funky, get rid of it.”
