French food expert Clotilde Dusoulier, of Chocolate and Zucchini, named the financier her favorite grab-and-go Parisian pastry. Financiers were created in the late 19th century for bankers. The cakes were appropriately rich with brown butter, shaped into gold bars, and small and crumbless for portability.
