  • Micro-waving is bad because it heats unevenly, but the alternative is a method that requires lots of stirring? I dunno. I suppose it works, but especially when preparing a complicated meal, using the microwave definitely has an edge.

  • Or you can just put them into a crockpot, smooth the top, pour warm milk over the top in a very thin layer, keep the crockpot warm at low heat, and just before you're ready to serve, stir in the warm milk. Delicious. And don't forget to add the roasted garlic!

  • Potatoes microwave wonderfully, one of the few things that do.

  • What difference does it make to cook them in an aluminum pan?

  • Great tip, thanks !! I love any mashed potatoes....

  • You may wish to avoid cooking your mash in an aluminium pan, also if you bring to boil some milk or cream then add mash, or better still dont start cooking the pots until the turkey is nearly cooked. http://chilli-recipes.blogspot.com/

  • If you have a stovetop that has XLO settings (otherwise referred to as 'simmer'), turn the flame up to about the first or second hashmark on the XLO selector so that the water continues to remain hot--kind of the principle behind hot tubs. Otherwise, while the method in the video is quite good, you will end up heating and cooling and continue to repeat that process, which is definitely not good.
