Make Hand-Held Meals in a Muffin Pan

Besides cupcakes and muffins, what else can be made in a muffin pan? Well, turns out you can make lots of classic dishes—frittatas, tamale pies, and popovers, for instance. They come out miniature, hand-held, and cuter than the originals.

  • I make mini meat loaves in muffin pans. Also line bottom and sides of muffin cups with shredded hash browns and bake until lightly browned. Top with chile and grated cheddar; return to oven to heat through. Remove and garnish with fresh slivered onion and serrano chile.

  • OMG! I love breakfast foods and I've got a good muffin pan one! You grease the pan, combine pat-dried shredded potatoes and butter in a bowl, put em in the tins shaping them like baskets. You bake it at 400 til they start getting crispy, take it out and crack one egg into each basket. Put it back in until your egg is ALMOST the way you like it.
