That’s precisely what some New Yorkers will get this weekend when Singapore Takeout—a traveling food fest organized by Singapore Eats—sets up its mobile kitchen in Gansevoort Plaza, featuring Chef Malcolm Lee of Singapore’s Candlenut Kitchen and local talents (Ed Cotton of Plein Sud, Anthony Ricco of Spice Market, and more).

Chilli Crab, totally.
Chicken rice - it sounds so bland, but it's actually SO GOOD!
Fish head curry - the head has some of the most tender meat! The red curry sauce filled with ladyfingers (okra) is delicious spooned over white rice.
I would love to try Chili Crab and Rojak; it sounds strange but delicious!
First I'd start with some Chili crab, proceed with bak kut teh (pork rib soup), continue with a dish of Singapore noodles (OK, these are actually not a native dish), and finish with fried carrot cake. Yum!

Singapore noodle..lots of ingredients and variety..I can benchmark a good restaurant off this dish..many variables that need to be executed well for a good flavor..
Chilli crab made with fresh sweet crab... brings out all the savory and spicy flavors even more..mmmm good

Roti prata! I love anything bread/bread-like.
hokkien mee with a generous sprinkling of lard cubes, and sambal belacan with a squeeze of lime on the side is mandatory. it's enough to make you cry.

Hainanese Chicken Rice is absolute perfection in my mind. It's one of those dishes that is so simple, that it is nearly impossible to master. I dream of that dish!
