  • Interesting that he's using one of the new Henckels Kramer carbon chef knives.

  • Definitely a little oversimplified (good luck cutting rounds of a medium or large potato keeping the knife always in contact with the board), and a bit problematic in a time where santokus, gyutos, Chinese cleavers, and nakiris are taking over more and more of the market for chefs knives - push cuts, pull cuts and such are often more useful with these knives.
