Jonathan Waxman’s Go-To Dish

This episode of My Go-To Dish features Jonathan Waxman, Top Chef Masters contestant and author of the recently published Italian, My Way. Waxman's West Village restaurant, Barbuto, is a Chowhound favorite. To riff off of the chef's brick chicken recipe yourself, start with this basic recipe and improvise as Waxman does in the video!

In My Go-To Dish, meticulously trained chefs, hardworking food-industry folks, and even, sometimes, famous actors show us their delicious, reliable, and easy meals. It's how they get dinner on the table quickly after a long day. Remember: They're just like us.

  • Very relaxed and easy-going; love the way he pours himself a glass of wine in the middle of the video! Thumbs up.

  • Yes and he put the grill pan that he used on top of the raw chicken on the stove top with the contact side down. I have a lot of respect for his skills, but did he ever hear of cross contamination.

  • Dude, did Waxman grind the pepper using raw chicken hands?

  • Nice, relaxing cooking lesson.

  • Thumbs up.

  • wouldn't mind seeing Waxman was on Top Chef Masters this season...
