Austin's creative spirit is really evident when you meet chefs like Tyson Cole who are pushing the perception of the city's cuisine way beyond the barbecue and Tex-Mex stereotypes. Cole chats with us about how he ended up opening the upscale sushi restaurants Uchi and Uchiko in Texas. We also visit two relative newcomers to the scene: East Side Show Room, where owner Mickie Danae Spencer hand-welded the entire place together to create a gorgeous steampunk temple to local cuisine including bunnies and antelope tartare, and Foreign & Domestic, where the pork belly is served with a pile of toasted oats.
