Eating Well on a Dollar a Day

Cranky over a November 2008 New York Times article that said it was impossible to eat well on a dollar a day, Rebecca Currie determined to take on the same project—and triumph! In early February, she launched her blog Less Is Enough, and now that the dollar-a-day project is nearing its end, you can look over the experiment. The blog has pictures of the foods she made as well as pictures of store receipts so you can see that yes, indeed, a box of Jiffy bran muffin mix was 59 cents.

So what did Currie, who was determined to stick with whole foods instead of junk, eat? Oats. Sunflower seeds. Frozen vegetables. Pasta and beans and tortillas and tomato sauce. One particularly delicious-looking morning, she ate something called an Idaho Sunrise, which is a Marion Cunningham recipe for a baked potato with an egg broken and baked over the top. Cunningham says, “when you mash the egg into the buttered potato, it’s like the sun coming up over the mountains.” Currie says, “I think that might have been the best meal I’ve ever had.”

Currie also had to run around to multiple stores to get bargains, duly noted as time-consuming and frustrating, and generally couldn’t afford meat. And she had to buy odd amounts of food in bulk: six cents of salt in the video below for instance.

  • That's nice but i am a 180 lbs guy who works out every day. I doubt her portions would suffice. Better make that $5 a day. For example, i would need more of a Texas Sunrise; 3 eggs over 3 potatoes.

  • if you have cooking and a lot of money to spend on gas you can do well this way. Other wise watch sales ad STOcK UPdurng sales on staples each time saves more. To do it different especially for the homeless and other in betweeners with no cook facilities. ..

    when you can find it on sale one of my favorite no cook quickie-cheapies was to grab a carrot or other mixed juice in the baby food...+READ

    when you can find it on sale one of my favorite no cook quickie-cheapies was to grab a carrot or other mixed juice in the baby food section. under a buck. The mixed fruit applesauces are great ( on sale) snacks and the containers are reuse to hold loose spices- all store with no fridge or ice.

    one of my favorite back seat of the car meals.
    open and drain both a can of black beans free fertilizer for the local plants..then french style greenbeans (drain/chop 'em up a little).
    on a deep plate, pour beans then gbeans then pour a smallest can from international isle of salsa on top. and please add trader joes pepper w/grinder basil and maybe a dash of oregano and garlic or onion. Feeling rich toss on some fresh cilantro and/or use trader joe's or s&w flavored beans.

    Eat with TJ's blue tortilla chips. or truly hand made tortillas.

    ps:salad fixings will keep a couple days if in container on floor in back under blankets in day for insulation. make sure to wash and DRY all veggies before putting away. crumbs form tortilla chips on top add some nice crunch.

    and oil and vinegar and some spices make fresh dressing without a fridge.

    never be homeless without a good steak knife, real cup spoon and fork , 2 can openers, plate, bowl, paper napkins sponge, towel and a tv tray and bottled water. and oil vinegar and spices to make that stuff taste like real food.

    dish soup and a water fountain dry dishes in the sun raining? w/ gallon jug of water you can do it at the car, dry on the tray with towel
    to absorb drips.

    have a bag for dishes and container or cup for the used silverware if can't wash then.Before dinner hang a grocery bag on the mirror for trash the paper napkins work best for stealth midnight peeing in the bushes, too.-COLLAPSE
