Calling all home cooks!

We want to know what you’re cooking in 2011. We know our community is full of amazing cooks with discerning palates. So let’s see what you’ve got. Submit your best postholiday healthy vegetarian main dish by January 14, and your recipe might win!

What do we mean by healthy? We mean dishes that contain whole grains, legumes, heart-healthy oil, low-fat meats, and fish (though not the latter two for these vegetarian recipes!), but little cheese or refined sugars and carbohydrates.

Use our recipe publishing tool to post the recipe, then paste the link into the CHOW Recipe Challenge thread on Chowhound. Photos of your dish are encouraged.

The CHOW kitchen editors will select three runners-up. We'll make the three dishes, photograph them, and then ask you to vote for the winner. We will post the winning recipe on CHOW.com’s Recipe Hub and send it out to thousands of subscribers to the CHOW.com Recipe of the Day Newsletter. (Are you a subscriber? You should be! Sign up in the Newsletters tab on your profile.) The winner can expect some cool CHOW schwag in the mail, too.

    That's I chose the version of my recipe that uses tofu. Most of the time I use Ahi. Thanks!

  • RonBoyd, "healthy" is a little generic-sounding, so here are a few guidelines without being overly specific:
    All around less fat and calories. Use of fish/seafood or less fatty cuts of meat, focus on vegetables, legumes, and whole grains. Less fatty dairy products, little butter, and heart-healthy oils. Less refined carbohydrates and sugar.

  • What, exactly, is a "healthy" recipe? Low Carb? Low Fat? Vegan?

  • Rasam, maybe go online and calculate the actual grams of protein in feta cheese and walnuts, then look up how much you should eat each day. That is definitely not more than enough.

  • Re the spinach salad, aren't the recipes supposed to be vegetarian? Instead of adding shrimp or chicken, why not add chickpeas for additional protein? The feta cheese and walnuts already supply more than enough protein.

  • spinach salad with local navel oranges, strawberries, almonds, feta cheese and fat free poppyseed dressing. I'll add some shrimp or chicken for protein to make a meal.
