The point he put something in his mouth, and then continued to use it to prepare soemthing that won't be cooked.
Should used a one-time tasting spoon, or better yet, use a piece of the end product, ie piece of lettuce.
Yummy salad. Great video. To all you germophobes, just because you have gloves on it does not make you germ free. You can lick a gloved finger just as easy as a bare finger!

What courage to pick something that could so easily be dismissed as passe by those with their nose in the air, and what an appropriate decision to do so! Taste is not about fads - this is a dish that has been eaten for hundreds of years, and yet, it is continually being lost and rediscovered. Some of the most memorable dishes I've ever eaten have been salads. Bravo for this great video commentary!
(And for the record - you wish he'd worn gloves? No - come on. What you mean is you wish they had shown a one-second clip of him washing his hands for the record. Professional chefs wash constantly. He probably washed his hands five times in the course of making this salad. Food is about the sensations of touch and love and emotion. I just love this website. Fortunately I have access to all these ingredients courtesy of our local Saturday Farmer's Market in Sandy Springs, GA. Neat to make the dressing right in the mortar. I have one just like that that is so under used in my kitchen. Wonder what coating the goat cheese with toasted fresh pecan crumbs would add? Might try it tonight!
Why doesnt he use gloves like most people do who work in he food business?
Gloves? Jesus Christ. I find that sort of germophobia infinitely more repulsive than the possibility of ingesting a few bacteria.
He didn't put his finger in the dressing and how do you know he didn't wash his hands? If you want every detail the video would be 30 min long.
But this really is every you need for a perfect salad. Start with the best greens possible and a simple vinaigrette to enhance that taste.
I agree. He licked his finger while tasting teh dressing. Then used his hands to toss the salad. Disappointing.
