Eatocracy had a pretty darn funny
5@5 interview with Texan Tim Love, chef and owner of the Lonesome Dove Western Bistro in Fort Worth. Normally I hate it when meat-lovers get preachy about how preachy vegetarians are, if you get my drift. But Love obviously has a great sense of humor so it's OK. (Hey, he also owns a couple of burger restaurants called Love Shack.)
My favorite quote:
"There are fantastic chefs like Jeremy Fox and José Andrés who have done amazing things with vegetables and even made me consider going vegetarian for a split second. But then I took a shot of tequila and came to my senses."

Any chef from DFW can't cook vegetarian food if their life depended on it. Stick to your rib eye or whatever cut of meat you love Tim Love.
