  • One of my favorite "go to" real chinese dishes is very similar to this one.
    chopped pork with garlic, ginger and water chestnuts, corn starch, steamed.
    way way yum. The salted fish is an intresting addition. Jicima instead of water chestnuts, Could it be that top chefs dont use canned water chestnuts?Fresh ones are hard to find and clean.

  • I'd be curious to know how to select a dried fish? I see bagged, dried fish at the international store all the time, but i'm never sure what i'd be looking for for a particular dish.
    That being said, I'm definitely gonna try next time I'm there, i'd love to try this!
