How to Make Nut Milk

Chef and author Bryant Terry (and CHOW 13 honoree) shows how easy it is to transform whole cashews or almonds into delicious milk, lactose not included! Just soak overnight, blend with some water and sweetener (he uses dates), and then strain the mixture through cheesecloth.

  • i make this twice a week and find the large fine mesh strainer over a 4 cup glass measuring cup works better for me than the cheesecloth. Not as messy. i squeeze down the nut mixture with a wooden spoon to extract any liquid. For remaining pulp uses I'd suggest buying a raw foods book as there are recipes that include nut pulp. In the meantime freeze it until you need it.

  • You might try adding some of the mix to cookie dough or granola, or granola bars.

  • Great, now what do I do with the pulp? Is there any flavor left? Nutrients? Nuts aren't cheap, don't want to just throw the pulp out after straining and squeezing.
