Michael Symon, chef, author, and Iron Chef, has removed a lot of pith in his time. To create the perfect supreme (a skinless, pithless citrus segment) for a great winter salad, he moves his knife this way and that, and ta-da. Much easier seen than explained, and that’s why we made a video.

  • don't you think that anyone could figure that out them-self,it is a no brainier

  • If you want to retain the juice, it's a good idea to supreme citrus directly over the bowl in which you will mix and/or serve your finished product. Otherwise a lot of juice gets left behind on the cutting board.
