I actually just yesterday saw a recipe that said you should knead the pie dough!
I was at a friend's house, and he was surprised the crust didn't come out right.. I didn't want to believe that he followed the recipe, but that's exactly what he did. I sent him this video.
the kneading part was just to grab attention, to show how over-handling can damage pie crust, but it that whole YDIAW concept is pretty ham-handed..
The rest of the video is pretty good. Don't know why they used the kneading angle except to fit it into the whole 'You're Doing It All Wrong' schtick. Kinda silly, and talks down to people.
Have to agree with you. What recipe says to knead pie dough? This video seems a bit disingenuous. You want a real tip? Substitute vodka for the water. You'll be amazed at the results. Your crust will come out light and flaky and will remain so for days.
Ummm... seriously, how many people really knead pie crust dough? I would think that even the most amateur baker is going to follow a pie dough recipe- and there's not a recipe on the planet that dictates kneading.
