Corinne Trang, author of Noodles Every Day, soaks rice noodles in cool water just until they are pliable before sautéing them in hot oil. Cellophane noodles can also get this treatment.

  • WONDERFUL tip! just last week I was making pad Thai and soaked the noodles in hot water. I noticed that they seemed a titch overcooked. now I know cold is the key

  • puppychao, I coat my noodles while they are cold in about 2 Tablespoons of oil by shaking them in a ziplock bag. Then I put them in the wok with really hot oil.

  • What about fresh rice noodles? When I cook with them then tend to stick together in giant clumps.

  • Thanks...What about tapioca noodles? can't figure them out!
