What to Do with Leftover Ricotta Cheese

Danielle Svetcov, author of The Un-Constipated Gourmet, has some great ideas for ways to use up leftover ricotta. Add it to pesto sauce to make it creamier, she says. Or to a turkey burger to make it juicier. And if you add a bit to bruschetta, you’ll have a more intense appetizer.

  • Mix with chives, parsley, sundried tomatoes, lemon zest, and salt , and use as a dip for veggies. Yum!

  • make a light summer pasta dish using the starchy cooking water from the pasta to dilute the ricotta. add fresh tarragon, thyme, basil or whatever herbs you have, generous salt and pepper and toasted, buttery panko breadcrumbs and parm-regg.

  • The Joy of Cooking has a recipe for Lemon-Sour Cream pancakes that work just as well with Ricotta cheese as they do with sour cream.

  • i like it kind of as a dip with just a bit of oregano (must be fresh, not dried) chopped in, drizzled with some good olive oil and a bit of black pepper, with a big basket of grilled, crunchy, olive-oily, salty ciabatta slices.

  • i'm with lynnlato, ricotta with honey is an excellent snack!

  • Sweeten with sugar and/or honey and eat it with sliced figs and pine nuts... or any fruit & nut combination. Great dessert or even breakfast.
