Fancy Hefeweizen Pouring

By the way, the lemon is actually practiced by many older folks, who feel their top-fermented beer doesn't taste right without it. This is because almost all top-fermented beers until relatively recently were at least slightly infected with acid-producing bacteria. They aren't actually harmful, in fact, they're healthy - like the ones found in yoghurt.
Linguafood has a good point. Although most bar tenders do it to increase the speed of the pour, the bottle should never touch the glass nor should it go beyond the plane of the top of the glass. A pour like this is common, however. It's like the myth of the seven-minute Pils in the northern part of Germany.
NEVER ram the bottle into the glass entirely. You know where those bottles are kept? Yuck. Not necessary, either. Just tilt, and pour slowly.
I think that if you add a lemon, you don't really like the taste of the beer. I mean hefe has a delicate flavor and the lemon would overpower it. It seems totally wrong. Plus wouldn't the acid destroy the lovely head that is such a part of the hefe experience?
I agree with Chuckles, no lemon in my Hefewizen. Or any beer, for that matter. It's added to Corona to help prevent diseases such as Montezuma's revenge.
And the trick works, even if you turn up the glass over a little too quickly.
I've seen the occasional german ruining a good Kristallweizen with a slice
of lemon in a Biergarten on a hot afternoon. But Hefeweizen? Never.
I'm with Throckmorton and lwr319. I lived in Germany for 30 years and drank it either with lemon or without, never though with orange.
Same with me Throckmorton! I've been drinking hefeweizen for over 25 years and have always drank it with lemon (I hate when bartenders assume I want an orange -- Thanks Blue Moon!)
I must be a freak. I love hefe with lemon.
Lemons are not for weizen, they are put into kristall (which is a bit different and filtered weizen).
Make sure the glass is big enough to hold the entire bottle or you'll have
a sad little mess on your hands. Also, it was so great of him not to stuff
a lemon in there and ruin it!
