What’s a Lobster Mushroom?

Ian Garrone, manager of Far West Fungi, recommends trying the lobster mushroom, which is actually one fungus on top of another. Oh, and lobster mushrooms are a pain to clean.

  • I do not recommend trying this mushroom for omnivores. Way too much hassle and cost for the flavor derived. It's wiser to use cheap crimni mushrooms and flavor it with shellfish stock.

    The only case I would consider this variety is for feeding vegans and vegetarians who like the flavor of lobster.
