Cremini (or Brown) Mushroom Guidelines
Far West Fungi manager Ian Garrone describes what you should be looking for when buying a brown mushroom, whether you should eat the stem, and what the underside “veil” of the mushroom means.

He owns a mushroom store, for crying out loud. "Baby portabellos" lends nothing to the picture since they taste nothing like them and they can't be "ripened off the vine"...
That was fantastic -- I learned a lot.
I am, however, surprised that the expert neglected to mention that cremini mushrooms are baby portobellos.
