  • If it is too hard to grate, cut it into tiny bits with a knife.

  • Along the same lines, you could make a fondue. Save that brick-like cheese for your next business party.

  • What if it's too hard to grate? I've had this happen with parmesan wrapped in waxed paper I kept too long. ( I know, I should eat more pasta...) I usually save the hardened pieces in the freezer and throw them into soups I'll blend after cooking. The cheese softens at the bottom of the pot and blends into the soup nicely.
