Should You Freeze Cheese?
Norbert Wabnig, owner of the
Cheese Store of Beverly Hills, knows that sometimes you’ll end up with more cheese than you can eat. Here’s how to hold on to it a little longer.

Watch (and also listen to) carefully to the video, he sais that you have to use the thawed cheese very quickly, otherwise it starts to break down, so there you have the reason why you have to cut it in small section
He tells us what to do, but not why, i.e. why cut it into sections? I can guess a few reasons, but I'm not sure that any of them would be correct. This is what would be valuable to know.
