I was told to never cut the cheese.
The knife with the holes is great, particularly for serving soft cheeses. Notice the upturned tines at the end. You can slice the cheese, turn over the knife, and pick it up with the tines to place it on a slice of bread or a cracker. I tried one for the first time at a buffet in a hotel in Berlin and bought one when I got back to New York.

SG - I actually have that knife, and it sticks less to that knife than it does a regular ones, and so is easier to remove. Of course, I have far too many cheese utensils, some of which work better than others.
This has got to be the dumbest "Chow Tip" ever, thought they are all pretty lightweight. Ya don't need a special knife to cut cheese. A simple paring knife is more then adequate. I love in the video how the cheese actually sticks to the knife that it is not supposed to stick to...
We use one made by Handee. It takes a little getting used to, and sometimes I still need the double-handled knife for the initial cut into more aged wheels, but it's a breeze to get through wedges! I was given one as a gift, and I like it. The string is actually piano wire ( single strand, very fine steel wire ) and it cuts through most cheeses very nicely. In some cheese shops and delis, I have seen steel guitar strings with improvised handles used for cutting large blocks.
Does anybody have experience with the cutter that comes with a string and a metal cutting surface?
