  • The problem is that if you don't catch the mold soon enough, the mold changes the flavor of the cheese. Suddenly, your mild cheddar is sharp cheddar.

  • Some molds belong on cheese, some don't. If it's slimy or smells bad, throw the sucker out. Cheese goes bad, just like any food.
