Don’t Be Afraid of Mold on Cheese

The problem is that if you don't catch the mold soon enough, the mold changes the flavor of the cheese. Suddenly, your mild cheddar is sharp cheddar.
Some molds belong on cheese, some don't. If it's slimy or smells bad, throw the sucker out. Cheese goes bad, just like any food.
