But I have discovered the breast is delicious when it comes from the right bird, i.e., the organic, Zen-farm raised, free range, hormone free, negative vibes free, sustainable kinds of birds that simply meditate to death.

    Okay, I'm being faceitous, but what I'm getting at is spend the money on top quality free range organic birds and they really taste like something - like chicken! It's worth the money in my opinion. I get mine from Whole Foods. It's their Rocky something or other roaster.-COLLAPSE

  • this was helpful to me, i'm definitely a novice cook as far as meat goes(most people are surprised when i tell them i'm not a vegetarian) but i've been trying to branch out and roasted a whole chicken the other night...it definitely wasn't a very elegant display when i was done hacking it up but it tasted good! but as far as chicken goes i will definitely be buying them whole so this is a useful...+READ

    I mean, you can do it that way, cutting through the skin and along the breast bone, and that's how I'd remove the breast from a large bird like a turkey, but when you see a butcher do it, they cut off the legs, thighs, and wings usually, cut straight down through the ribs from tail to neck...+READ

    Okay, it's a good idea to buy a whole chicken and cut it up your self, but isn't he "DOING IT ALL WRONG"?

    I mean, you can do it that way, cutting through the skin and along the breast bone, and that's how I'd remove the breast from a large bird like a turkey, but when you see a butcher do it, they cut off the legs, thighs, and wings usually, cut straight down through the ribs from tail to neck to remove the back, press down on the breast to crack the breastbone, slip a finger under the breastbone to separate it, and clean up with a boning knife as needed.

    I wish I could do that as deftly as a butcher. How about a video showing this method? They seem to be able to bone a chicken breast in about two seconds once it is separated from the back. Of course they've done thousands of them. So, I practice.-COLLAPSE

    The dark meat of the legs and thighs is so succulent and flavorful, the breast meat is as bland as tofu.

    By the way, the technique shown in the video may also be used to cut up a cooked whole chicken.
