Ok I got this much information at my local Albertsons-How much EVOO, how much thyme, how much Halibut(can other types of fish be used?)...I need a recipe-I've just turned my dad onto fish cooked say "In Cartoccio"-i.e. in parchment paper(my dad doesn't like most fish-"I don't like 'fishy' tasting fish")but he's indicated that he might like OO Poached Fish...Please I need a recipe...
Great point, Tony Sansone! I meant to ask David about what he does with the leftover olive oil but you're probably right that the low temp poach means that oil is still useful if you filter it. Thanks! Meredith of CHOW
Don't forget save the EVOO and reuse it many times. Since you poach at low heat, you do not lose the health value in the oil. When finished poaching, run the oil through a coffee filter to take out any small pieces of fish etc. and save the oil in the refrigerator to use again to poach or fry fish. The thinner coffee filters work best.

Chef was also correct to use an oil that tastes really good, like Kreta Reserve EVOO. By reusing the oil many times, it is actually not expensive to use a fine quality EVOO to poach or fry. The real beauty is that anything poached or fried in good EVOO is a healthy heart meal and the taste is out of this world.

The searing tuna with water clip was VERY useful. I've screwed up expensive tuna trying to pan sear it and this looks idiot-proof. Thanks very much.
