Fiorella’s Jack Stack Barbecue, Kansas City, Missouri, with Skatterman & Snug Brim

The sound of Kansas City hip-hop duo Skatterman & Snug Brim is reminiscent of Dr. Dre in his prime. Intent on representing their hometown well, the two went back and forth over several ’cue options (there are a lot to choose from), before agreeing on Fiorella’s Jack Stack Barbecue. From the dinosaur-size beef ribs and steak knives that felt like machetes to the massively billowing booth we sat in, we were dwarfed—even the ceiling seemed 300 feet high. The burnt ends (slightly charred ends of a smoked brisket) and pork ribs were amazing, possibly the best barbecue we ate during the trip. Honorable mention goes to the hickory-pit baked beans and fire-seared chicken wings scarfed down as appetizers. Not a bad way to spend the afternoon.
