  • What you're looking for in a good wine pairing is complimentary and contrasting flavours. You need to be familiar with specific characteristics in the nose and on the palate in the wine that you choose. Once you know that, you can pair it with a dish that shares some of the same flavours or that will enhance/be enhanced those of the wine.

    A Pinot Noir certainly will not pair with something as simple as a tomato sauce, beef, lamb, or anything with developed or intense flavors. The reason: Pinot Noir is too light a wine to pair with those flavors, and the flavors of the wine will be lost.

    The other unfortunate factor here is most inexpensive Pinot Noirs taste terrible. The Riesling is a good overall white wine, but for the red, something that delivers developed flavors without tannins or harsh off-notes is in order.-COLLAPSE
